Motel Muffins: A Yummy Recipe!

Being a mom means your days are long, nights are short and your memory is somewhere in between. Here at the momAHOLIC diaries we are all about making life a little easier, whether it's reviewing a product you were on the fence about, finding coupon codes, sharing recipes or giving fashion and beauty tips. If you need a place to escape reality for a few minutes and wind down after putting the kids to bed you came to the right place!
Every momma on-the-go knows how hard it is getting the kids ready, fed and out the door in the mornings. I have a recipe that is perfect for fall and winter when you want/need a hot breakfast!
My mother-in-law gave me this recipe and my kids and I love it! This is a recipe you make ahead of time and pop it in the oven in the morning while you are getting ready. It's called Motel Muffins because it makes enough to feed a Motel!! You can store the dough in the refrigerator up to 6 weeks in a container with a lid. How awesome is that?! Wake up ~ pre-heat oven, jump in shower, pop muffins in oven, do make-up and BAM breakfast is ready!
Motel Muffins



Mix dry parts:
5 cups flour

3 cups sugar

5 cups Raisin Bran cereal

2 tsp salt

1 tsp cinnamon

1/2 tsp allspice

5 tsp baking soda
Add: 

4 beaten eggs

1 cup oil

1 quart buttermilk






Bake at 350 for 20-24 minutes {Depends how hot your oven cooks}. You can also add chopped up nuts before cooking or sprinkle with cinnamon/sugar after cooking. Optional ingredients include; 1 tbsp of almond, lemon or vanilla extract added to the mix.




Recipe makes 1 gallon, refrigerate overnight. Will keep up to 6 weeks in the refrigerator in a container with a lid. Just scoop out as much as you need and put the rest back. Enjoy!
